Giving Thanks!

I wanted to give thanks for our many blessings, we may not have a huge mansion, a brand spanking new luxury car, an enormous amount of clothes and shoes but we DO HAVE things that are much more enjoyable and gratifying.ย 

We’ve got love, real love with all it’s dimensions.

We’ve got an adorable, healthy, spunky, smart baby boy who makes us smile, laugh, and sometimes cry 24/7.

We’ve got family, a wonderfully sweet family,ย whoย love and care for us immensely.

We’ve got friends, amazing friends who make up for the fact that we don’t live close to family and make us feel as though we are apart of their family.

We’ve got crazy yet loving furbabies which drive us nuts but also fill our home with joy.

We’ve got our health, which is the greatest luxury one could ask for.

We’ve got a lovely home, which suits our little family perfectly and even has room for friends and family. ๐Ÿ˜‰

We’ve got sweet memories that remind us how far we’ve come and how truly blessed we are.

We’ve got each other, a real relationship that takes hard work and is not fake for the sake of others, but is REAL for ourselves.

Most importantly, We’ve got a loving, forgiving, always acceptingย God, who loves us through our faults, forgives our sins and embraces us without hesitation regardless how often we seek him. Without him, none of the others blessings would be possible.

Today and everyday, I’m am truly THANKFUL.

Confessions of a full time mommy, wife and grad student..

1. I desperately want to blog more regularly,..but school is just consuming all of my extra time right now. Any time I think “oh I should blog this”…..the perfect little student in me says “no, you should be reading, doing an assignment, or getting ahead somehow.” Obviously, we know all know who always wins this battle.

2. Every time I think of putting A in daycare, while I greatly love the setting itself from an educational standpoint, I HATE it from my mommy/parenting perspective. NO ONE can ever care for him the way I can…the thought of someone else watching not watching him properly FREAKS ME OUT.

3. I have not been meal planning whatsoever, we have literally been just going with the flow and sadly, I’m not liking it. I need to get with it and meal plan and stick with those plans.

4. Along with lack of meal planning, I also…{& I HATE admitting this one}…I have not been working out, at all. I seriously am so swamped with these two grad courses that working out is the last thing on my mind.

5. What is is every more frustratingly weird about my lack of maintaining a workout ethic, is that I’m actually OK with this, I’m not saying I’m HAPPY about it, because I’m obviously NOT, but I’m not STRESSING MYSELF about it. Before becoming a mommy, I would workout regularly for my sanity, and if I missed a workout, it affected me drastically, I’d be consumed with *guilt guilt guilt*. {how healthy is that?!} Thankfully, becoming a mommy has taught me SOO much, and one thing I’m glad it’s helped me with is dealing with my emotions and that nasty one: guilt. When I was preggers, I SWORE I would workout out daily, in an attempt to make time for *ME*, but little did I know that also becoming a mommy changes your prorities (not to say that having me time is a bad thing, it’s a good thing, this I KNOW.) I’m just saying it’s A LOT easier said than done, it’s easy to say “I’m doing this for me..” but when it comes down to it, other things are more fun, like watching my adorable little man play, throw toys, and attempt to crawl. So, while working out and fitness is a great passion of mine….being a good mommy is in fact a greater one.

6. If I’m not working out, do you think my house is absolutely spotless? HA! Try again. Thankfully, I have amazing friends who could care less about how tidy my casa is, as well as an AWESOME hubby who helps me out at much as posible around the house (usually when we’re expecting company. lol)

7. Speaking of *expecting*……….

JK!! LOL, but, true confession: I sometimes look at A and think “OMG! he’s not a baby anymore” ย I miss having a baby baby, a wittle bitty baby, and the fact that my little guy is growing so much makes me want another baby, so I can have a baby baby, you know since A is already a toddler-baby almost. {& if this happens every time we have a little one around 8-9 months…LOOK OUT 19 Kids & Counting! HAHA! jk jk…or not! :-P}

8. Fro-yo from Sweet Frog has become a regular part of my weekend routine, and this needs to STOP. *just after ONE more trip though. ๐Ÿ˜›

9. These two grad classes are really time-consuming and TOUGH…..but I secretly LOVE it. I’ve always had a love/hate relationship with school, but I’ve always had more LOVE for it because the pressure it places upon me is….thrilling! What a thrill-seeker huh? ย Maybe now I’ll go skydiving, or get a tatoo……or not. I’ll stick with my schooling to give me that RUSH! ๐Ÿ˜‰

10. While I greatly enjoy what I’m studying and adore my career field, I’m SOOO looking forward to Christmas break so that I can devote all of my free time to just doing absolutely NOTHING with my darling hubby and adorably sweet little blessing. โค

Be awesome!

Heyy there…so I know it’s been almost a MONTH. geez, where has the time gone?

I’m not deliberately not posting or updating, I’ve just been well…SWAMPED. Not in a bad way, just in a super crazy, busy kinda way. I’m a full time mommy by day and grad student by night. Though I do love both dearly, I haven’t been able to find extra time for the bloggy. Between socratic seminars, dirty diapers, children’s book critiques, baby food making, essays, baths….{you get the picture}…I’m still working on a schedule, but honestly we just go with the flow here. ๐Ÿ™‚ Every day is a different day and we’re just enjoying the sheer randomness. ๐Ÿ˜‰ I will say, a sweet glass of wine has been my best friend after a super busy night. {I may actually become a wine-o, for real!}

This is what my schedule has been like lately:

So almost OCTOBER! YAY! Bring on the cooler weather, scarfs, beautiful fall leaves and boots! I’m ready for it ALL…however I’m hoping is stays warmer here and the fall transition delays itself a bit since I will be going home for a couple of weeks. So looking forward to seeing the fam, and mostly seeing Little Man’s reaction to everyone. He is currently on a “I only want mommy” phase, mixed in with a bit of seperation anxiety, so it should be exciting to see how he adjusts to new people. & Mommy is looking forward to extra arms to hold my sweet pumpkin.

My classes have been going well, 2 classes is TOUGH, but I’m managing it well. I’ve been doing A LOT, I mean A LOT of reading, lots of kids/young adult books and novels. I enjoy the reading but hate doing critiques on them…but that’s ok. I’ll get better at it with more practice.

Speaking of reading, I found an awesome FREE book mark printable, that I just have to share. Nothing like FREE, cute, awesome stuff right?! Download, print and get to READING! ๐Ÿ˜€

Confession:-I’ve totally been slacking on Fifty Shades of Grey….school reading has taken up all of my reading time these days and to be honest…..I can’t read these lovely children’s books and novels and then switch over to read a risque book that makes blush like CRAZAYY!! ๐Ÿ˜› haha So Mr. Grey will just have to wait a while..or until this semester is over unfortunately.

Baking frenzy

Hey guys & gals…sorry it’s been a while, I’ve just been busy with my two handsomes, friends, and the OLYMPICS!! *USA*!!! โค

Lately I’ve been in a complete baking frenzy…from those super healthy milk cookies, to MORE milk cookies, and today one of my all time faves…BANANA BREAD!

I swear my little kitchen aid mixer has gotten more use these past two weeks than it has in the 5 years I’ve had it.. Better late then never I always say ๐Ÿ˜‰ Right?!

ย I of course had some help from my little baking assistant…Aiden the Adorable. ๐Ÿ™‚

We’ve been a wee bit more happy {if that’s even possible since we’re always smiling} now that we are trying to get back to a regular nap schedule *fingerscrossed*…but that’s a whole other parenting post in itself..

So while little man is ย napping, I’m going to enjoy a nice piece of this lovely bread…a half of slice with a smear of peanut butter is calling my name! โค

Milk Cookies

Cookies cookies cookies YAY!!

So I’m always looking for yummy, healthy cookie options and was recently disapointed with TLC Kashi cookies that I bought the other day. I LOVE Kashi products, but the cookies were just blahhh in my opinion. {Sorry Kashi!} Along with wanting a yummy treat, I’m always seeking healthified versions of baked goods and this one was in deed a hit. I had first tried making a version of these cookies a couple of months ago as a way to help increase/boost my milk supply. {it’s all about the leche these days! ๐Ÿ˜‰ } However, that other recipe that I tried was also disappointing :-/Then I came across this recipe and decided to give these cookies another go around and my oh my did they NOT disappoint at all, in fact they are FA BULOUSLY DELICIOUS!

Major Milk Makin’ Cookies
Recipe by Kathleen Major

1 1/2 c. whole wheat flour
1 3/4 c. oats
1 tsp baking soda
1 tsp salt
3/4 c. almond butter or peanut butter {I used Almond butter & I think that’s what made them super yummy}
1/2 c. butter, softened
1 c. flax
3 T brewer’s yeast
1/3 c. water
1 tsp cinnamon
1/2 c. sugar
1/2 c. brown sugar
2 tsp vanilla
2 large eggs
2 c. (12oz) chocolate chips
1 c. chopped nuts of your choice

Preheat oven to 350 degrees Fahrenheit

Combine flour, baking soda, cinnamon and salt in a bowl.
In a large bowl, beat almond butter, butter, sugar, brown sugar, vanilla, brewer’s yeast, flax and water until creamy.
Mix in eggs.
Gradually beat in flour mixture.
Mix in nuts and chocolate chips.
Add oats slowly, mixing along the way.

Place balls of dough onto greased baking sheets or baking stones.

Press down each ball lightly with a fork.
Bake 12 minutes.

Now you might say, “OMG! Milk making cookies? No thank you..” But seriously these are REALLY GOOD and no they aren’t going to make you lactate at random..haha {though that would be funny}, instead these are super healthy cookies filled with tons of fiber and healthy fats.
