Hey Gym,

Nice to see you AGAIN! 🙂

I decided to change things up a bit today and hit up a strength training class at the GYM! I must say…..I’m a total GYM LOVER! Seriously, the entire atmosphere makes me sooo happy! A gal pal and I took a full-body strength class which was similar to Body Pump (Gold’s Gym) only it lacked a bit in the music department (Gold’s Gym seriously has a FABULOUS music coordinator!)

 The last time I went to a class….pssshh! Ages ago and it didn’t last long because, well our hubbies had a hard time with two newborn babes to care after for an entire hour & a half or so, so needless to say, our previous gym class bubble was bursted when we realized our newborn babies love their mommies too much to let them get their ZUMBA on at the gym: hence the need to workout en la casa (at home). 😉

I’d say we gave these two cuties plenty of time to warm up to their daddy-o’s!!

Of course since it had been forever since I did a complete strength training routine, my arms felt like noodles afterwards but that post-workout burn felt SOOO GOOD! My fitness goals as of lately have been mostly to tone up; I’m at a happy weight, ideally I would like to decrease my body fat but I’m not overly preoccupied with percentages right now since I’m still breastfeeding. {Speaking of BFing, did you know Danica McKeller (Winnie from Wonder Years), breastfed her son until he was 2 & 1/2? SO inspiring!}

Along with today’s strength training workout, my workouts this week have been really good and I’ve been feeling GREAT!!

Mon: 5 minute plank

Tues: 30 min 3 mile(hard) intervals

Wed: 3o min 3 mile (easier) intervals

Thurs: Strictly Strength Class

Fri: Not sure yet, maybe a long distance run?

This week I also signed up to do Giselle’s 3-week Summer Ready Challenge and have been doing these exercises as well & I can already feel it in my tummy. 🙂

Along with getting in some great workouts, I’ve been enjoying more clean eats with salad beasts like this:

Speaking of avocado…I’ve kind of developed an avocado obsession and have been eating it with everything! I wonder if my skin will turn greeeen!? haha! Anything your LOVING lately!?

The not-so-smooth smoothie queen

Can you believe it’s MAY already!?!? Are you ready for SUMMER yet!? I know I sure am!


One of my favorite things about the warmer weather is…fresh berries, cold refreshing drinks, and SMOOTHIES!!


I do have to confess one thing though…

I’m the worst smoothie maker. :-/ No joke!

I’ve tried and tried on several occasions but I just can’t make them as tasty, delicious and absolutely wonderful as I would like/hope they would be. I guess my issue is that I love to just throw things into the blender with the hope that the combo is as lovely as I envision….however half of time they are beautiful in color and totally lacking in taste! 😦 So the whole “winging-it” when making smoothies clearly does NOT work for me.

While I lack smoothie making skills….I have to say my husband is quite the opposite and is officially the *SMOOTHIE KING* of the casa!! He whips up an ever-so-delicious green smoothie! ❤

So since I’m clearly one who needs to follow a smoothie recipe step-by-step, I’ve been looking for new smoothie recipes online and came across a few that look pretty tasty! {Now if only I can make them taste as good as they look! lol}

A double munchkin meal win kind of Monday

Happy Monday ya’ll! I swear the weekend comes and goes SO quickly and Monday creeps up on us all the time.

Although, the semester “technically” started on Saturday, I finally opened up my textbook and read through each of my syllabi today….and you know what…I’m pretty EXCITED!! While I must say I greatly enjoyed the winter break, I immediately started to feel bored…I kept thinking to myself “what should I do now?!” lol I guess I’m just a busy body, or better put…. a *busy-brain,* always needing something on my mind to keep me challenged and focused.

While the challenge this semester is definitely going to be juggling classes and keeping after little Mr., I’m still planning on being more accountable fitness wise as well. I need to get into a workout routine and stick to it. I’m trying, really trying to workout early in the morning as a jump-start to my day…but everytime my alarm goes off it is just SO much easier to hit the lovely snooze button over and over But, I know that by getting into a regular routine of working out in the morning will help allievate the anxiety I get towards the end of the day when I’m trying to cook dinner,  chase a cute little 10 month old, and converse with the hubby. I hate looking at the clock and seeing it’s dinner time and I haven’t even workout yet…that totally kills my motivation and makes me a total grump.

So….any tips for getting into a daily EARLY morning workout regime??


Now to the good stuff…my Monday was pretty stinking Marvelous because…

1. I actually read my first chapter for this week’s assignment earlier rather than later…(waiting til the last minute totally stinks…and I’ve promised myself to be more accountable this semester and read ahead/as early as possible!)

2. I got to *sleep in* this morning, thanks to my super sweet hubby! ❤ YAY for 9 am wake ups during the week!

3. I experimented with two of A’s meals today and they were both a hit! I made him blueberry oatmeal pancakes for breakfast & a mango-banana yogurt & oats smoothie for dinner. 😀 It was my first time making him a smoothie and he wouldn’t put the cup down! *insert proud mommy happy dance here*

baked tilapia

So yesterday I tried a new recipe that I found online and I LOVED IT! So easy and so yummy!

It was adapted from this recipe: Baked Tilapia


4 tilapia filets

1 & 1/2 tablespoon olive oil

1 dash Tony Chacheres creole seasoning

1/2 teaspoon each of garlic powder, onion powder and lemon pepper

1/2 teaspoon parsley, dried or fresh

2 tablespoons of fresh lemon juice

1 tablespoon  each of parmesan cheese and  bread crumbs and 5 smashed croutons (I used olive oil flavored Texas toast croutons)


Preheat oven to 375.  Place fish in a 9×10 baking pan. Sprinkle TC’s creole seasoning, garlic powder, onion powder, lemon pepper and parsley over fish. Pour olive oil & lemon juice over the fish. Bake for 15 minutes. Mix parmesan cheese, bread crumbs and croutons and sprinkle over fish. Bake for an additional 5 to 10 minutes until fish flakes easily with fork. Switch oven to broil for 2 minutes to get fish crispy, if desired.*

*I personally think that broiling is necessary and adds to both the texture & flavor of the tilapia.

Number of Servings: 3-4

My hubby & lillte sister loved it & asked for seconds! Next time I’ll have to make more for second helpings!! 🙂

New Year’s Inspiration

Hey all! Happy 2012!!! Hope you all had a fab NYE! We hung out with friends and had a blasty! Instead of doing the whole new year’s resolution thing, I decided to make goals for myself for 2012 with the help of an Inspiration board. I decided to make TWO, one for my general overall health and the other for specifically for physical health and workout motivation. I’m a VISUAL learner and seeing images helps me make greater connections to their meaning, so the inspiration board is definitely fitting for me.

Here is my first one:

*Love Family*-I want to really focus this year on expressing to my loved ones how much they mean to me and how wonderful they are to have in my life. We tend to forget to express ourselves with the craziness of everyday life, therefore I feel it’s so vital to tell those you love just how much of a blessing they are to you!

*Relax*-I guess this is a funny one considering hubby and I will be embarking on one of the greatest transitions in our lives (God-willing). However, I do tend to over-react, over-analyze things to the extreme and WORRY A LOT, though I know this is not likely to change, I do have to remind myself to just RELAX sometimes, BREATHE and take it easy instead of getting too upset and worked up about it.

*Life-long friends*-Since we are so far from home, friends are seriously like family, therefore I want to make sure I’m being the best type of friend I can be so that I can create long lasting friendships.

*Shop smarter*-New baby=New expenses and therefore BETTER BUDGETING! We have developed a budget plan and decided we need to stick to it and manage our money more precisely. (Geez, growing up stinks sometimes…:-P haha)

*Enjoy/Embrace change*-I know every aspect our lives will CHANGE and sometimes I don’t handle change all that well (who does honestly?) so instead of getting upset or frustrated by all the new changes that will likely occur this year, I want to learn to EMBRACE, ENJOY and CHERISH every ounce of all of these changes. I’ve got tons of worries/what-if’s going through my head, “Will I be a good mom?” “Will I know what to do when this happens?” “Will breastfeeding be as horrific as people make it out to be??” “Will my marriage stay strong throughout all of these changes?” Instead of overly worrying about them, I’m going to try to RELAX more and EMBRACE it and most importantly *HAVE FAITH* throughout it all.

*Live Fit*-Along with all the changes, I do hope to maintain my healthy and fit lifestyle. I know my workouts will be different, scheduled around baby and if Working out has always been a big stress reliever for me, it allows me to clear my head and relax when things get to be too much. It’s my “me time” & although that lovely “me time” will likely be spared A LOT with parenthood, I would like to motivate myself to try to squeeze in fitness whenever possible. Creativity may become a major factor in order for this to happen, but I’m READY and WILLING to do all that is possible to maintain a FIT lifestyle.

*Smile more*-No matter what challenges and hardships we are faced with, a lot of us (me especially) tend to dwell on all the NEGATIVE and forget about all the wonderful postive aspects of our lives. Therefore, I’m really going to try to be more optimistic and SMILE more. When you smile, it makes others smile! Sooo show those pearly whites my friends! 😉

*Be a good mom*-If there were a book on it, I’d READ IT, but sadly there is not. (Or there is and I don’t know about it, so please fill me in ASAP! lol ) But I do want to inspire myself to be the best mom that I can be. I know perfection is impossible and I also know that I’m going to make mistakes, several mistakes here and there, but regardless I want to be a mommy with 110% of my ability. As an athlete in school I always strived to work hard and give 110% into my sport so that I could be better and improve with each practice. I think the same lies with all things in life, the more effort you put in the more output you will receive. Though I know with motherhood, some things will work and others will not and nothing is really to be expected besides the fact that you should probably just expect But I do want to be as loving as possible to my little guy and give my ALL 110%. I think that constitutes being a good mom…don’t you?

Here is my fitness inspiration board:

*Eat more Veggies*-No real explanation needed just that I want to incorporate more GREENS into my diet so that I am able to better nourish myself and baby.

*Focus on good food*-Especially after all the sweets from the holidays our bodies need good food to fuel us throughout our busy days, therefore I want to incorporate CLEAN eating and snacking to help detox those holiday sweets and again better nourish my body.

*Work it out*-Though pregnancy has drastically changed my workout routine, I’ve make adjustments as needed here and there but I do want to continue to “work it out” for both me and baby, especially afterwards to help me attain my pre-baby body.

*Run a 5k*-I’ve ran them before and LOVE them, but have never really stayed involved in races. I hope that starting off small will help ease myself back into working out and also allow me to work my way up, I would LOVE LOVE LOVE to eventually run a marathon! 😀

*Drink more water*-I drink a good amount now, but with the less room in my belly it’s hard to guzzle down a lot of water, but I’m trying to remind myself that HYDRATION is a key part of being fit and living a healthy lifestyle, which is why I added H2O to my board.

I ❤ Jennie Finch and think she’s not only BEAUTIFUL, but also very inspirational. This quote says it all by reminding us that seeking PERFECTION isn’t important. Perfection is impossible, but happiness is totally attainable and worth it!!

I also love Sofia Vergara and that she embraces her body and it’s amazing curves. YAY for the girls with REAL BODIES full of curves!!

Well that’s all my friends, hope you like my Inspiration board because I sure do! 😀 HAPPY NEW YEAR and HAPPY NEW *YOU* whatever goals, resolutions you may have! In 2012, NOTHING is impossible!! ❤

Study Study Study!

Hey there! hope your having a HAPPY FRIDAY! My this week seemed to just FLY BY! Not sure about you, but I’ve been SUPER BUSY all week with lots of this…


So with all the studying, I needed plenty of this..

{But I haven’t been over doing it in the caffeine department, I promise ;-)}

I will say it’s been kinda hard to stay completely on task thanks to a sweet furry baby of mine..

He  apparently thinks the MOST comfy place to take a nap is ON MY DESK, on my books nonetheless. 😛

As you can see, I’m no chef/recipe wizard, I do however love trying new recipes.

The problem is that I never actually “measure” when I cook/add spices to my food, I just add some here and there.

I’m just a “go with it kinda cook” 🙂 My friend Amanda was alway the same way. I’d constantly ask her for the recipe to

something and she’d say, “I don’t have one, just threw a bunch of things together.”

Her food was pretty yummy, and so I totally get it now. 😉

Are you a measuring type or a “throw it all together” kinda person??

Anyways, back to more STUDYING! Ready to be DONE with these finals so I can do some of this..

*soyyy good!*

Happy Saturday friends!

Today we woke up to weather in the mid 40’s here in the D.C. area, I must say it’s quite LOVELY!! 🙂 I personally LOVE this weather, hubby on the other hand is a Texas boy at heart and doesn’t enjoy the colder weather much at all. I can’t believe OCTOBER is here already!! Seems like just yesterday it was beginning to feel like summer was right around the corner and now HALLOWEEN is but a few weeks away. I love October because it’s Breast Cancer Awareness month and it’s so nice to see all the NFL teams and players supporting the cause with there cute pink football gear. I can definitely respect a man wearing pink to support such a great cause! 😉



With the new month I’ve also decided that to make a few goals for October, just to keep me motivated! Goals include:

1. Incorporating YOGA into my workout routine

2. Stretching before and after working out (I’m lazy post workout and NEVER do this but I know of the many benefits of stretching)

3. Plan weekly meals and STICK to it. (I started off planning each week, then a slowly quit sticking to it after a couple of weeks…)

4. Create a more structured workout schedule (Lately, I’ve been going with the flow and I’d just think I’d benefit more from my workouts if they were more structured and focused)

5. Have another *GIRLS* day!!

6. Take tons of pics to create memories for us and baby, especially when we go home to visit the Fam<3!

7. Eat more VEGGIES, I’m pretty good at the fruit part, but I need to include a daily amount of veggies into my diet for me and baby!

That’s my OCTOBER goal list and I don’t think I’ll have a problem meeting them, some will be harder than others, like the Yoga one, bc I’m not a yoga expert, but it’ll definitely challenge me to be more creative with my workouts.

So Hubby and I have this little food tradition, it’s something we do every Saturday and we both look forward to it because we don’t get to eat breakfast together during the week. We have *BREAKFAST TACO SATURDAY’S* every Saturday! Lately it has consisted of potato and egg tacos. He could literally eat them EVERYDAY and never get tired of them. Me on the other hand….NOT so much…I love having a variety, especially when it comes to food! So inspired by our taco tradition, we came across a new to us product: Trader Joes Soy Chorizo.

We’ve always eaten regular chorizo before, our families both ate it, so we grew up eating it on the regular. Since being in D.C., we’ve haven’t found the kind of chorizo we prefer, so our chorizo and egg taco days haven’t existed since moving to the new casa….that is until we found TJ’s soy chorizo!! At first, I wasn’t sure if it would meet the mark, not that I’m doubting TJ’s at all, I LOVE the place and their products, but once you’ve had “the real deal” other substitutes don’t always meet one’s expectation.

So this morning I was eager to try our this new product and I must say……..

IT WAS *OH SO YUMMY*!!!!! No joke, I think I like it BETTER than regular chorizo!!! 😀 And that makes me HAPPY!!!!

The texture was the same, except it had NO GREASE (*happy dance*) which was pretty amazing if you’ve ever cooked with the real stuff. Surprisingly hubby loved it too-which is always good! So our taco Saturday will now include SOY CHORIZO TACOS!!! 😀

I must say, this is the start of a wonderful weekend in our house! 😉 We’re off to the gym, and then later we’ll be watching the *HORNS* play ball with from friends.
