Christmas decor

I cannot believe the new year is only 5 days away! Where has the year gone seriously?? One thing I love about the holidays is decorating…if I could, I’d leave my holiday decor up ALL YEAR LONG, but what fun would that be? lol However, I just might leave it up all throughout January, if the hubby lets me… πŸ˜‰ hehe

So I will be very sad see all this lovely Christmas-y decor get put away until next year..

The one thing that I need to get for next year is a nativity set. My momma collects them and has a gorgeous collection of various nativity scenes which totally make CHRISTmas much more lovely. ❀

My Β DIY project for next year would definitely have to be a Christmas card holder! πŸ™‚ Maybe one like either of these:

Looking back on last year’s Christmas decor, I must say that this year’s has been much more meaningful and joyous thanks to this sweet little blessing! ❀

Cowboy cookies!

The ladies bible study group that I get together with each week decided to have a holiday cookie exchange so I had to get my BAKE ON! πŸ˜€ I absolutely LOVE baking; while I greatly enjoy cooking I feel that BAKING is just my thing! πŸ™‚ I love oatmeal raisin cookies but knew that it’s not everyone’s cup of tea, so I figured I would try something different but something still with yummy oats. So after searching Pinterest cookie recipes for days, I finally decided on baking these lovely COWBOY COOKIES! {I was actually thinking of calling them *DALLAS COWBOY* COOKIES because you know… they ROCK! πŸ˜‰ lol Now let’s hope the BOYS don’t prove me wrong this weekend..hehe}

BEST -EVER Cowboy Cookies Β from Disney

Bursting with oats and chocolate chips, these flavor-packed cookies are an irresistible treat for kids, whether you customize them with special ingredients or stick to the delicious basics.

Hands-On Time:Β 30 minutes
Ready In:Β 2 hours, 45 minutes
Yield:Β about 2 dozen cookies


2 cups old-fashioned rolled oats
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon cinnamon
1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
2/3 cup granulated sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
2 cups semisweet chocolate chips

1 cup chopped walnuts


  1. In a large bowl, stir together the oats, flour, baking soda, baking powder, salt, and cinnamon.
  2. In a separate bowl, blend the butter and sugars with an electric mixer until smooth, about 2 minutes. Add the eggs and continue to beat until fluffy, about 1-1/2 minutes. Blend in the vanilla extract.
  3. Using a wooden spoon, stir the dry mixture into the butter mixture one half at a time. Mix in the chocolate chips and walnuts. Refrigerate the dough for 1 to 2 hours.
  4. Heat the oven to 350 degrees. Line a large, preferably light-colored baking sheet with aluminum foil, then grease the foil.
  5. Using a scant 1/4 cup per cookie, shape the dough into balls and place them on the sheet about 2 inches apart.
  6. Use your fingertips to flatten each ball to 1/3 inch thick. Bake the cookies on the center oven rack for 13 to 14 minutes, turning the sheet about halfway through. When they’re done, the cookies should be very lightly browned and still look moist. Don’t overbake them.
  7. Cool the cookies on the baking sheet for 2 to 3 minutes, then transfer them to a wire rack.

Customizing Cowboy Cookies
Add some variety to your cookie jar by replacing the walnuts and chips with different mix-in combinations:

Coconut Cowboy Cookies:Β 1 cup of flaked sweetened coconut, 2 cups of chocolate chips, and 1 cup of chopped walnuts.

Cranberry White Chocolate Cowboy Cookies:Β 1 cup each of white chocolate chips and dried, sweetened cranberries.

Peanut Butter Cowboy Cookies:Β 2 cups of peanut butter chips or 1 cup each of peanut butter chips and chocolate chips.

{The only real changes I made to the recipe was that I didn’t use full cups of PB chips and Chocolate chips..I’m not a BIG CHOCOLATE fan and didn’t want the chocolate to be too overwhelming…but if you LOVE chocolate, add however much you like! πŸ˜‰ }

VERDICT: They were a total HIT!!! My hubby, who doesn’t like sweets, LOVED them! {OR he was just being sweet…but he ate TWO of them, so that tells me he’s a sweetie AND also really liked them!!}

Lovely Holidays

Hey there! Hope you are all having a great Friday!! Can you believe 2012 is just around the corner? My how time has flown by!! πŸ˜€ I’ve totally continued to relax during these lovely holidays. We usually visit the family in Texas and are always Β super busy spending time between each of our families. This is the first year where we’ve stayed home and relaxed throughout the holiday festivities. While we greatly LOVE our families, we are slowly adjusting to the new changes that our little family has began to pursue.

One thing that we’ve greatly enjoyed lately is spending time with *GREAT FRIENDS* πŸ™‚ Being a military family is difficult and one of the hardest parts is getting to know other families. We’ve fortunately been blessed to have met a fabulous couple who very familiar with this lifestyle and are also pregnant with their first little one as well! πŸ˜€ This whole experience has been soooo much easier thanks to the fact that her and I can share our experiences throughout this wonderful journey. ❀


{I feel that this is SOO true and often think how amazing it is that God allows such friendship paths to cross. ❀ }

Last night we had a game night with them and ended up laughing and playing various board and card games until 3:00 in the morning!! πŸ˜€ Talk about CRAZYYY! Haha! We know we won’t be doing this much in the future so we’re taking advantage of a little silliness while we can! πŸ˜‰ Gotta live it up!

Mine is definitely a tie between Taboo & Apples to Apples.

After staying up WAY past our bedtime, we totally felt like zombies today and wanted to do a whole lot of this:

Along with all of the RELAXING hubby and I have been doing, we’ve also been getting in some sweet workouts thanks to gift to ourselves: a TREADMILL!!!

The treadmill + my kindle = the PERFECT relaxation combo ❀

Along with getting my workout on, I’ve been reading a lot and I finished reading Little Earthquakes.

Loved it! Now I’m debating between Water for Elephants and Something Borrowed.

To accompany our great workouts, we been fueling up on some good eats and drinks. We’ve gotten to experiment more with our Vitamix and I made a fabulous GREEN SMOOTHIE! It was my first and I was pleasantly surprised by how DELICIOUS it was!!

{This lovely Green smoothie had: Almond milk, a banana, a handful of Spinach, a spoonful of almond butter and 2 tbsp of chia seeds.} Surprisingly even hubby LOVED it! πŸ˜€ *insert happy dance here* πŸ™‚ We will definitely be making more of these lovelies in the future. πŸ˜‰

I love smoothies, but finding the perfect combo can be kinda tricky, so I’m always looking for Β new smoothie recipes and blending tips.

Though I haven’t created a list of New Year’s resolutions yet, I do have some ideas in mind and I will most likely be creating an inspiration board (thanks to the Fitnessista) as a reminder and motivator throughout the new year.

What plans do you have for New Year’s Eve?? We will likey be hanging out with those fab friends of ours that I mentioned earlier πŸ™‚ Great Food + Fab Friends= LOTS of FUN!!

lazy holidays

I’ve totally been RELAXING and being LAZY since finish school this semester..but what can I say, with the hubby taking extra time off, what else can I do? πŸ™‚ He’s been off this WHOLE week which has been pretty stinkin’ fabulous, so we’ve just been hanging out with great friends, shopping for little man<3, and spending time with our little furbabies. Though I wish we could be close to family during this holiday season, I’m pretty thankful with all the blessings we’ve been blessed with this year. I have YET to start my holiday baking…I said I was being “lazy” remember? Plus, I’ve already sent out holiday goodies to the fam, so these sweets will likely be just for our friends here and ourselves. YUM!

One tradition we’ve always done is create our Christmas photo card. I’ll have to find our previous cards to share with ya’ll, but I was so excited to make THIS year’s card especially since we aren’t going to be home for the holidays and I want to show off little man’s growing progress. We snapped so many pics, but these are my faves:

Mrs. Lex is sooo photogenic, she LOVES the camera, in fact she kept trying to get into EVERY photo we took.

Do you blame her though? She should totally be a puppy model. πŸ˜‰

Luke on the other hand…not a fan of the camera at all. We always try to get a “family photo” with him in it and he never looks at the camera or even cares to be in the photo with us.

πŸ˜› Cats…gotta love em’.

One thing Miss Lexie has been doing more of is…

I think she’s slowly starting to understand she’s going to be a big sister.

She’s also LOVING the fact that Dad is home during the day now. Daddy= the best belly rubber EVER.

It’s FABULOUS! I know there are TONS of recipes out there but I had to *try it first* to make sure I’d even like to make it myself.

Well I’m off to do some more relaxing with the hubby<3! I’m so excited to watch Christmas movies and snack on some sweet goodies (& of course exercise somewhere in between πŸ˜‰ hehe)

Hello December!

I’ve totally be MIA and I apologize! I told myself that with my blog I would STAY WITH IT and blog as often as possible, BUT…..I’m also in GRAD SCHOOL right now and it’s the last two weeks of this semester (YAYYY!) and I’m SUPER BUSY with the semester coming to an end. I have my last few assignments due this week and FINALS next week. So needless to say, I’ve been bombarded with school and homework and such, but I will hopefully be blogging more often in the near future! πŸ˜‰

Recap: Thanksgiving was very nice! We went to a friends house to celebrate and eat lots of yummy food! Then we did the Black Friday thing, but didn’t find much. One thing we DID get was…..THE CRIB!! πŸ˜€ Hubby actually surprised me and got it when he said he was “at Best Buy.” lol

I am *27 weeks* this week! πŸ˜€ Almost at the *3rd Trimester*!! Can’t wait to due an update on how things have been lately! Lots of growth and changes but still feeling good!

On a less happy note: I was devasted by the recent news that Exercise TV will discontinue their On Demand feature. 😦 This has become my go-to exercise resource and I’m SOOO bummed that I will no longer be able to do cardio kick boxing and the chiseled arms episode. BOOO!!! Guess I’ll need to find an alternative for workout ideas. Speaking of,…anyone got any at home exercise resources? I’m loving POP pilates, but I need some CARDIO inspiration as well.

We’ve also started to collect more and more baby items! YAY! I’m loving the fact that the hubster is getting more involved and in every store we go to he immediately goes to the BABY section! ❀ So sweet!

We’ve also started to get our Christmas decor out! πŸ™‚ We have yet to put up the tree because every time we plan on it, he ends up working super late. So hopefully tonight the TREE will be up! πŸ˜€ Can’t wait to take pics of it and share with ya’ll. Meanwhile, my little furry monster Lucas is LOVING all the decor items that are slowly appearing everywhere…he has always gotten a plastic ornament and rolled it around the entire house. Silly cat.




I’ve TOTALLY been in the mood to BAKE, so I think I’m going to make these yummy cookies tonight while we decorate the TREE! πŸ™‚ I only wish we had family close by so I could bake all the time and share all the sweet treats with them. Some day God willing I’ll be able to unleash my inner Betty Crocker! πŸ˜‰

Flourless Monster Cookies (courtesy of Bites and Bliss)

  • 1/4 cup packed brown sugar
  • 1 T sugar
  • 1 T honey
  • 2 T butter, softened
  • 1 egg
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/2 cup peanut butter
  • 1 1/2 cup old fashioned oats
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 3/4-1 cup β€œstuff” (nuts, chocolate, dried fruit, candy…anything goes!)

Preheat oven to 350 degrees.Β  Beat sugars and butter until light and creamy.Β Β  Beat in egg, vanilla, and salt.Β  Add peanut butter and mix well.

In a separate bowl, combine oats, baking powder, and cinnamon.Β  Add dry to wet and mix well.Β  Fold in add-ins.

Scoop dough by rounded tablespoons onto prepared baking sheet.Β  Bake 8-10 minutes until edges are slightly browned.Β  Remove from heat and let cool on pan 5 minutes before transferring to wire rack to cool completely.
