Take Time Tuesday {#7}

Take Time Tuesday, thanks Katie for hosting!

Due to the recent events in Oklahoma, many emotions have flustered my mind and I have to say that I’m so thankful for the ability to communicate with family back home via technology.

It is undoubtly very difficult being away from home, though it is part of the military lifestyle we’ve adapted to,  it’s extremely tough nonetheless. I personally find it especially difficult being away from loved ones during the holidays and even more so during times of tragedy and devastation. Moments of such as these make me want to run to those that I love and hug them endlessly. Tragedies remind me just how precious life is and how I must cherish and embrace every moment of it. Sadly, it is impossible to predict such events from occurring nor can I rush home every time they do occur, though I wish it were possible to do both. While nothing compares to the warmth of a hug/embrace from my family members, it is nice to connect with them through various modes of technology, via text, photo sharing and video chat.A and mommy

We typically video chat once a day, at least, with my parents. We chat so often that it has become part of our daily routine and A lights up when he hears the sound of a video call coming in. 🙂 I feel that this (amazing!!) technology has completely changed my little man’s relationship with his grandparents/aunts & uncles and I am ever so thankful for it, because it is such a joy to see him interact with them, whether he’s showing off, doing tricks and simply talking to them. While it might sound very shallow, (I swear it isn’t),  I honestly cannot fathom living without the wonderful technologies of today. Granted, I’m not saying it would be impossible, I’m just plainly acknowledging that A would have a completely different relationship with our families without video chats/skype; therefore I’m forever grateful for having access to these simple yet wonderful technologies that have enabled us to stay connected amongst the many miles of distance between us. ❤

Plus, I mean c’mon, who wouldn’t want to chat with this little ham?!

Love this! SO true:

Again, sending my thoughts & prayers to Oklahoma.

Friday FAVES

Good Morning Lovelies! Today started off with a scrumptious breakfast for me and the little.

While mommy was getting breakfast together, somebunny decided it was time for his mommy to clean out her bag…

gotta love the extra helping hand around the house! 😉

Breakfast was served & A LOVED his french toast. I of course HAD to add avocado to my breakfast sandwich..seriously, it makes everything better!

{a runny egg sandwhich with mild cheddar, ham and avocado on an english muffin with a wishful pup in the background, just praying that I’d drop the sandwich by accident. LOL}

I’ve been LOVIN’ some new-to-me products and other things lately so I thought I’d share them with ya!

1. Coconut milk

I  was kinda skeptical about it because I worried it would be “too coconutty” but its NOT and  it in fact is very smooth and creamy, similar to cow’s milk. I usually use almond milk but this has to be my NEW favorite cow’s milk alternative.

2. Sunrise Crunchy Vanilla Cereal

The hubby picked this out for me and it is THE BEST. I’m actually not a big cereal person at all, I really don’t like eating it for breakfast because I just feel there are so many other scrumptious breakfast options to choose from. BUT I do like cereal as late night snack sometimes and this has been my go-t0 snack of choice lately. SOOOOOO GOOD!

3. Pomegranate powder

Again, another new to me item the hubby picked up for me one day as my “surprise” from the store. I immediately add it to a smoothie and loved it! I actually use it in this smoothie the other day, but I think I forgot to mention it earlier.

{My new FAVORITE smoothie, made by MEEE 🙂 {YAY!} with both coconut milk and pomegrante powder along with other goodies.}

4. Stripes…I’m obsessed!

5. Early morning snuggles

20130517-130058.jpgHe has been teething lately which has had us on a roller coaster of emotions all week, but thankfully today he was super happy and extra snuggly. ❤

6. My handsome dancing King

20130517-131725.jpgHe has his mommy’s taste in music (seriously) and loves Prince Royce. Do you blame him? 😉

7. Favorite fitness app: Endomondo

Since the weather has been so nice I’ve been trying to get outside more often and go for jogs with my little man, but I alway wonder how far we’ve ran/walked until I found this app. It tracks distance and pace which is exactly what I was looking for.

8. This book:book

I started reading this on Tuesday for a book club I’m taking part in and I’m hooked! Its very witty, heartwarming and completely entertaining- I especially love all the sarcasm and humor.

{Synopsis: Bernadette Fox is notorious. To her Microsoft-guru husband, she’s a fearlessly opinionated partner; to fellow private-school mothers in Seattle, she’s a disgrace; to design mavens, she’s a revolutionary architect, and to 15-year-old Bee, she is a best friend and, simply, Mom.

Then Bernadette disappears. It began when Bee aced her report card and claimed her promised reward: a family trip to Antarctica. But Bernadette’s intensifying allergy to Seattle—and people in general—has made her so agoraphobic that a virtual assistant in India now runs her most basic errands. A trip to the end of the earth is problematic.

To find her mother, Bee compiles email messages, official documents, secret correspondence—creating a compulsively readable and touching novel about misplaced genius and a mother and daughter’s role in an absurd world. Description from: Goodreads}

Hey Gym,

Nice to see you AGAIN! 🙂

I decided to change things up a bit today and hit up a strength training class at the GYM! I must say…..I’m a total GYM LOVER! Seriously, the entire atmosphere makes me sooo happy! A gal pal and I took a full-body strength class which was similar to Body Pump (Gold’s Gym) only it lacked a bit in the music department (Gold’s Gym seriously has a FABULOUS music coordinator!)

body pump{talk about inspiration!}

 The last time I went to a class….pssshh! Ages ago and it didn’t last long because, well our hubbies had a hard time with two newborn babes to care after for an entire hour & a half or so, so needless to say, our previous gym class bubble was bursted when we realized our newborn babies love their mommies too much to let them get their ZUMBA on at the gym: hence the need to workout en la casa (at home). 😉

I’d say we gave these two cuties plenty of time to warm up to their daddy-o’s!!

A & M{photo taken months ago…ahh! that hair! ❤ LOVE him!}

Of course since it had been forever since I did a complete strength training routine, my arms felt like noodles afterwards but that post-workout burn felt SOOO GOOD! My fitness goals as of lately have been mostly to tone up; I’m at a happy weight, ideally I would like to decrease my body fat but I’m not overly preoccupied with percentages right now since I’m still breastfeeding. {Speaking of BFing, did you know Danica McKeller (Winnie from Wonder Years), breastfed her son until he was 2 & 1/2? SO inspiring!}

Along with today’s strength training workout, my workouts this week have been really good and I’ve been feeling GREAT!!

Mon: 5 minute plank

Tues: 30 min 3 mile(hard) intervals

Wed: 3o min 3 mile (easier) intervals

Thurs: Strictly Strength Class

Fri: Not sure yet, maybe a long distance run?

This week I also signed up to do Giselle’s 3-week Summer Ready Challenge and have been doing these exercises as well & I can already feel it in my tummy. 🙂

challengeI’m ready to get SUMMER Ready!!

Along with getting in some great workouts, I’ve been enjoying more clean eats with salad beasts like this:

{spinach & romaine lettuce with turkey breast, carrots, broccoli, avocado, tomatoes, blueberries, a side cottage cheese and a smear of hummus!}

Speaking of avocado…I’ve kind of developed an avocado obsession and have been eating it with everything! I wonder if my skin will turn greeeen!? haha! Anything your LOVING lately!?

Have you taken any group classes? If so, which is your favorite?

Well, I’m off to watch my team play and hope they get the job done tonight!

A delectable cookie

Happy Saturday ya’ll! ❤ With Mother’s Day tomorrow I figured I would share this awesome recipe I tried last week that was a total hit in our house! My hubby swears he doesn’t like sweets and rarely eats them, so typically when I bake its me and A with 3 dozen cookies or 2 loaves of bread to ourselves. However, after making this recipe, hubby turned into a little cookie monster!

cookie monster“COOOKIEEEEE!!!”

I had been wanting to make these forever, but with school I simply never got around to doing it. I finally decided to give them a go, especially since if I didn’t, we’d have a full jar of this glorious goodness that I could eat by the spoonful all day long…

Thanks to my friend Mila for this oh-so-delicious cookie recipe. I’m not a big fan of chocolate chip cookies, (weird I know)  and these reminded me of them only they were BETTER! They’re SO good that you are sure to LOVE them too. 😉

I followed the recipe exactly and they were perfect! Seriously, perfectly scrumptious and really moist!

Yes! This is how crazy it gets when I’m baking. (but give me a break, I was baking TWO types of cookies that day!)20130511-080034.jpg{oatmeal dark chocolate chip cookies on the left and middle, and the dough of cookie butter cookies on the left.}

Cookie Butter Cookies

1/4 cup butter, softened
3/4 cup cookie butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tablespoons honey
2 tablespoons water
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped semisweet chocolate

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. In a large bowl, cream together the butter, cookie butter, brown sugar, and white sugar until smooth.

  3. Beat in the eggs one at a time, then stir in the honey, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture.

  4. Fold in chocolate chunks.

  5. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.

  6. Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.

  7. Enjoy!

    Hope you have a wonderful weekend!!

    keep calm cookie
