New Year’s Resolutions!!

It’s hard to believe we’ll be say goodbye to 2012 and HELLO 2013!!!

I must say, 2012 has been one of the greatest years of my life, if not THE  ABSOLUTE BEST! ❤

With each new year I promise myself to live a healthier, more active lifestyle, especially after indulging all on the Thanksgiving-Christmas goodies! ❤ This year, while I do plan on focusing on maintaining a healthier lifestyle (physically), I also want to acknowledge and improve my mental and emotional health. I want to STRESS LESS and be more mentally fit. So my New Year’s resolutions are:

1. Eat Clean, less processed junk with some necessary indulgences {like fro-yo} from time to time.

2. Create a workout plan and STICK TO IT! Including getting back into the gym to lift weights again! 😀

3.Be smart with our finances & SAVE SAVE SAVE!

4. READ MORE, watch TV less.

5. READ to Aiden. I want to start a weekly reading link up. I want to focus on making time for reading to our babies, no matter what age they are, ALL children benefit from read alouds, even 18 year-olds! 😉 For this I want to choose one or two NEW books a week and read them to A throughout the week. (One week you may be able to read the book 4 times and the next only 2 but that’s ok, ANY rereading of the text is GREAT!!) So over the course of a year, your child will be exposed to atleast 52 NEW PIECES OF LITERATURE!!! 😀 I hope to read your comments on the new books that you are reading with the little ones you love. When I was preggers, the hubby would always read Dr. Seuss’ Fox in Socks to my belly and baby A would always kick around and I swear to this day, he LOVES that book and will literally sit still when it is read to him! ❤ {P.s. OBVIOUSLY, you can tell I’m an education major and LOVE all things related to education…hope you don’t mind my passion for education pouring out of me here on the bloggy)

In January I’ll be taking two new grad classes and though it’ll be tough to follow all of these resolutions, I feel that by sticking to them, I will overall be a better, healthier, happier ME!!

I cannot believe the new year is only 5 days away! Where has the year gone seriously?? One thing I love about the holidays is decorating…if I could, I’d leave my holiday decor up ALL YEAR LONG, but what fun would that be? lol However, I just might leave it up all throughout January, if the hubby lets me… 😉 hehe

So I will be very sad see all this lovely Christmas-y decor get put away until next year..

The one thing that I need to get for next year is a nativity set. My momma collects them and has a gorgeous collection of various nativity scenes which totally make CHRISTmas much more lovely. ❤

Looking back on last year’s Christmas decor, I must say that this year’s has been much more meaningful and joyous thanks to this sweet little blessing! ❤

Marvelous Monday

Today is not only a *Marvelous Monday* because we had an awesome weekend, but most importantly because it is CHRISTmas Eve! ❤ So I decided to participate in my sweet friend Katie’s MIMM, {for the first time!!}

On Friday we hosted GAME NIGHT at our house and it was SUPER FUN! The babies got to play while us adults shared some great laughs while playing Pictionary. We also munched on some PIZZA….and someone else joined in on the fun as well…PIZZA

He totally LOVED it and kept grunting at us to give him more! 🙂

Since we stayed up til 3:30 AM (WHAT!?!…I know!!) We ended up having a LAZY Saturday and took a marvelous 2 hour nap!

We also received our lovely Christmas photos on Saturday and I LOVE THEM ALL! I’m finding it very hard to choice which one(s) to use for our holiday card this year..(YES! I’m behind sending out my cards this year but I couldn’t help it. Better late then never?! ;-))

This weekend I also got in a nice 3 mile run!! A FULL NONSTOP 3 miler!! 😀 I was very proud of myself because I haven’t ran that far in a while, since way before baby. I’m thinking about adding this to my New Year’s resolution so that I can start running again on a more regular basis. (I would love to run a 5 & 10K this upcoming year!)

Sunday I baked more cowboy cookies! Including a new-to-me recipe of Mexican Wedding Cookies that are full of powdery goodness 😉 cookies M

This weekend I also finished another DIY wreath! 😀 I had initially make this one…

Cowboy cookies!

The ladies bible study group that I get together with each week decided to have a holiday cookie exchange so I had to get my BAKE ON! 😀 I absolutely LOVE baking; while I greatly enjoy cooking I feel that BAKING is just my thing! 🙂 I love oatmeal raisin cookies but knew that it’s not everyone’s cup of tea, so I figured I would try something different but something still with yummy oats. So after searching Pinterest cookie recipes for days, I finally decided on baking these lovely COWBOY COOKIES! {I was actually thinking of calling them *DALLAS COWBOY* COOKIES because you know… they ROCK! 😉 lol Now let’s hope the BOYS don’t prove me wrong this weekend..hehe}

BEST -EVER Cowboy Cookies  from Disney Family.com:

Bursting with oats and chocolate chips, these flavor-packed cookies are an irresistible treat for kids, whether you customize them with special ingredients or stick to the delicious basics.

Hands-On Time: 30 minutes
Ready In: 2 hours, 45 minutes
Yield: about 2 dozen cookies

Ingredients

2 cups old-fashioned rolled oats
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon cinnamon
1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
2/3 cup granulated sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
2 cups semisweet chocolate chips

1 cup chopped walnuts

Directions

  1. In a large bowl, stir together the oats, flour, baking soda, baking powder, salt, and cinnamon.
  2. In a separate bowl, blend the butter and sugars with an electric mixer until smooth, about 2 minutes. Add the eggs and continue to beat until fluffy, about 1-1/2 minutes. Blend in the vanilla extract.
  3. Using a wooden spoon, stir the dry mixture into the butter mixture one half at a time. Mix in the chocolate chips and walnuts. Refrigerate the dough for 1 to 2 hours.
  4. Heat the oven to 350 degrees. Line a large, preferably light-colored baking sheet with aluminum foil, then grease the foil.
  5. Using a scant 1/4 cup per cookie, shape the dough into balls and place them on the sheet about 2 inches apart.
  6. Use your fingertips to flatten each ball to 1/3 inch thick. Bake the cookies on the center oven rack for 13 to 14 minutes, turning the sheet about halfway through. When they’re done, the cookies should be very lightly browned and still look moist. Don’t overbake them.
  7. Cool the cookies on the baking sheet for 2 to 3 minutes, then transfer them to a wire rack.

Customizing Cowboy Cookies
Add some variety to your cookie jar by replacing the walnuts and chips with different mix-in combinations:

Coconut Cowboy Cookies: 1 cup of flaked sweetened coconut, 2 cups of chocolate chips, and 1 cup of chopped walnuts.

Cranberry White Chocolate Cowboy Cookies: 1 cup each of white chocolate chips and dried, sweetened cranberries.

Peanut Butter Cowboy Cookies: 2 cups of peanut butter chips or 1 cup each of peanut butter chips and chocolate chips.

{The only real changes I made to the recipe was that I didn’t use full cups of PB chips and Chocolate chips..I’m not a BIG CHOCOLATE fan and didn’t want the chocolate to be too overwhelming…but if you LOVE chocolate, add however much you like! 😉 }

{The END PRODUCT: The bigger ones were the PB & Chocolate chip Cowboy cookies and the smaller ones on top were the Coconut Chocolate chip Cowboy cookies!}

VERDICT: They were a total HIT!!! My hubby, who doesn’t like sweets, LOVED them! {OR he was just being sweet…but he ate TWO of them, so that tells me he’s a sweetie AND also really liked them!!}

11 Random Facts About Me

1. I’m a total thrifter. I LOVE finding  unique, vintage looking things whether it be dishes or a cute top; I love the thrill of not knowing what I’m going to find and then finding something truly awesome.

2. I have a massive collection of pens; I have all colors and types and sadly I keep adding to the pile especially since every semester I get a new set for the new school year. I don’t count them or anything specific like that, I just absolutely adore a good pen that writes smoothly and has a nice comfy grip, and therefore I have a TON. I guess because I’m used to writing all the time I figure the pen better be comfy and cute.

3. Being pregnant helped me learn to love and truly appreciate my body. I’ve never in my life felt more beautiful than when I was pregnant; I seriously loved seeing my body change and learned to appreciate how wonderfully designed our bodies are.

4. I don’t like to drive; that doesn’t mean that I won’t drive, I just prefer not to. Ever since my cousin passed away in a car accident, I’ve always been spooked about the whole idea of driving and would rather avoid it at all cost.

5. I’m a bit OCD about nail polish colors, for instance, I cringe when I see hot pink toes in the middle of winter. I can’t help but think that the nail polish color should reflect the time of season. Maroons, greys, deep reds, browns should be used in the fall because they are fall colors, while pastels and subtle pinks should be used in the spring, with hot pinks & oranges and bright reds in the summer along and no color during the winter because no one sees your toes anyways. I know it’s weird but I just can’t help it..lol

6. I’m a DIYer, I love doing crafts and greatly enjoy getting craft ideas from Pinterest. I’m not saying I’m a pro-crafter, but I’ve just always been pretty crafty.

7. I’m not a big cereal eater and I don’t consider it a real breakfast. I think of it more as like a snack because I don’t think it’s filling like a real breakfast would/should be.

8. I have a complete love/hate relationship with running. I truly hate the thought of it; the anticipation before the run because is completely intimidating but the post run feeling is amazing and afterwards I feel I can conquer the world very time.

9. I LOVE the smell of crayons; it feels me with memories of childhood and the great joy that I had in school. Which is why I want to be a teacher so that I can help students fall in love with learning.

10. If I wasn’t a teacher, I would love to be a fitness trainer/nutritionist because of my passion for health and fitness. I would love to help others attain a fit and healthy lifestyle.

11. I have absolutely no patience for computers and technology, thankfully the lovely man I married is a technology connoisseur and computer specialist. 😉

  1. What is your favorite breakfast? My favorite everyday breakfast is any type of egg scramble with toast. My favorite indulgent breakfast would have to be: PANCAKES!
  2. Do you prefer to workout at home or at the gym? Prior to baby I would have said the gym only, but now that I’m a mommy it’s more convenient at this time for me to workout at home, so at home it is…for now! 🙂
  3. What would your last meal be? PIZZA!!!
  4. What is your favorite Christmas/holiday tradition? Baking & decorating cookies…of course eating them!!
  5. Are you an early bird or a night owl? Both, I fluctuate between the two.
  6. If you won the mega millions lottery what would be your first purchase? A home close to family in Texas.

  9. Do you own any pets? Why or why not? Yes, a cat and a dog. I feel that they are the perfect companions in life because they brighten your day and simply make life fun.

Aiden {9 Months}

My *9 month old* is seriously becoming more and more of a toddler and less of a baby with each passing day..

Baby (almost BIG BOY) Aiden…

-Loves to EAT food; he shoves 2-3 puffs in his mouth all at once.

-Learned to drink from a straw cup (which only took about 2-3 days).

-Eats about 3 times a day of solid food and continues to nurse on demand.

-Has TWO TEETH now, his first one he got the day before Halloween and the second a week later.

-Likes to pull his big sister’s tail at any chance he gets, thankfully she’s come to really like him a lot since he tends to share his food with her ALL THE TIME. 😛

-Had his first encounter with the grouchy cat one morning and lets just say that the score is Lucas 1 Aiden 0…for now..

-He says “Ki-Ki” for cat and sometimes says “key-key”

-LOVES carbs like his momma…haha..He ate some whole wheat banana pancakes one Sunday for breakfast and had rice that same day for lunch and was SUPER HYPER afterwards…lesson learned: Don’t double up on carbs

-He “gobbled til he wobbled” on Thanksgiving and ended up taking a good 2 hour nap afterwards.

-Likes fruit like is momma, especially blueberries, strawberries, bananas, pears, peaches and *mandarine oranges*.

-He also loves yogurt, he’s been eating YoBaby Yogurt, but also likes all other types of yogurt as well (including fro-yo, again like his mommy).

-Loves his CD and has finally gotten used to listening to Christmas music, particularly Michael Buble’s Christmas album which mommy LOVES!

-Started moving from a seated position to his knees on Nov. 20th, and also began scooting on his bottom around in circles to. Also started to become more active while on his tummy, which he hated to be on for such a long time.

-Began crawling by kicking his lower body and rolling, (you could tell it took a lot of strenuous work because he would constantly grunt and take breaks throughout his mini journeys) but after a while he figured out how to make it easier and began to really crawl in a special way by using one leg in the typical crawling position  and keeping the other leg straight while crawling.

-GRUNTS to tell us stuff esepcially when implying “MORE”

-Can SIGN “leche” 😀 (leche= milk). I can ask him to sign “leche” and he’ll sign it to me and I can sign it to him and he smiles and gets all giddy.

-Knows the sign “all done” and understands it but has yet to use it.

-Blinks his eyes several times (otherwise known as “ojitos”) and enjoys getting a great applause from everyone.

-Still only says “Da-da” and “Ba-Ba”

-Likes his jumperoo but prefers to be on the floor able to move and crawl around.

-He enjoys his toys but prefers non-kid friendly toys such as, the remote, mom and dad’s cell, the computer cord, pretty much anything that he isn’t supposed to get his hands on. 😛

-He loves bath time and has finally gotten into a “bedtime schedule.”

-Loves the Christmas tree & looks at it everytime I say “tree”

-Has been all about the pretty gifts under the tree and has unwrapped a few of them with great joy! So we are very to excited to see his reaction on Christmas morning!

-He has also found the drawers on our TV stand and gleefully crawls to them the minute he/s put on the ground.

-He loves to throw stuff, especially his toy balls, golf balls dad practices with and his toy rings.

-He has also started to nap & sleep in his crib 😀 which was a big step for us! (I’ll post more about this later)*

-He wants to STAND & pull himself up to STANDING all the time, especially when in the bath tub! lol

-He shakes his head NO to EVERYTHING! I’ll ask “Aiden is that yummy?!” then he shakes his head Nooooo but then opens his mouth for me to feed him more. lol

He is seriously becoming so independent and more mobile by the minute…my friend told me that once little boys get moving, they don’t stop and it leaves mommy exhausted. While I love seeing him grow, I can’t help but think what happened to my little baby…he’s not a baby anymore he’s becoming a toddler. :-/

I haven’t gotten an accuract account of how much little Mr. weighs and how tall he is, because his 9 month check up isn’t until after the holidays. So I’ll have to update that later. All I know he’s getting a happy, healthy and loving baby and that’s all that matters to me!

Fun fact: Dad loves to sing “Hey diddle diddle, the cat in the MIDDLE…” instead of the “the cat and the fiddle” 😛 Such a silly Daddy!

Music!!

Sooo now that school is DONE for the semester! *happy dance*  I’ve finally started to get more into a workout routine which I am totally loving.

One thing that I’ve noticed ALWAYS boost my spirits is *MUSIC*!! While I might be a shy, conservative person…I LOVE me some LOUD, CRAZY, BOOTY-SHAKING, JUMP UP & DOWN MUSIC!! I feel that a workout can totally be made or broken by the extent of its music. I’ve taken some awesome yoga/pilates classes where the music was so invogorating that though I may have at first doubted the intensity of the workout routine itself, it was the music transformed it and made it an exhilaratingly effective workout.

Upon getting my run on the other day, {which might I add, is a work in progress…I’m far from running 5 miles like I used to, but I’m getting there…} I couldn’t help but once again be totally inspired to really challenge myself. There are often times when I physically feel I can’t go farther or push harder, but with the help of a good tune, I end up proving myself wrong and complete that obstacle that my mind felt I wasn’t capable of doing. Though we don’t always believe it, our minds are much more powerful than we think. 🙂

Not only does jamming out to good songs help me get my *sweat on,* I ALWAYS have something playing throughout the day when I’m cleaning and picking up around the house. & YES!! I often randomly pick up my little man and dance around the house with him, which he loves and cries when I go to put him down afterwards. lol

While I’m a passionate country music lover, I must say when it comes to working out and getting motivated, my country tunes don’t always give me that push that I need… so I of course have to rely on my Pop & Latin favorites like J.Lo and Christina….

My NEWEST workout favorite and I think I’d have to say a song that I would say is somewhat of a personal theme of mine would be:

I just feel that whenever I hear this song it completely reminds to forget about what others think or say; life is way to short to dwell on little things that are simply insignificant. Plus, I’m just a huge J.Lo fan! 🙂

My ALL TIME FAVORITE workout song HAS to be:

This has ALWAYS been the most influential workout song for me personally. I think its a total  “thanks” to all who ever criticized my physical abilities back in high school when I wasn’t living an active and healthy lifestyle. This is the song I listened to during my daily workouts when I first began going to the gym and started to live a healthier lifestyle. I feel that without that criticism, I wouldn’t have transformed and become a  real “fighter” for my health.

Though I don’t necessarily listen to them when I’m working out, I turn up the volume to full blast {or as loud as I can depending on what Mr. A is up to ;-)} to Carried Underwood’s Blown Away and Miranda Lambert’s Fastest Girl in Town. What can I say, I’m just a country girl at heart!! ❤ 🙂
