Baking frenzy

Hey guys & gals…sorry it’s been a while, I’ve just been busy with my two handsomes, friends, and the OLYMPICS!! *USA*!!! ❤

Lately I’ve been in a complete baking frenzy…from those super healthy milk cookies, to MORE milk cookies, and today one of my all time faves…BANANA BREAD!

I swear my little kitchen aid mixer has gotten more use these past two weeks than it has in the 5 years I’ve had it.. Better late then never I always say 😉 Right?!

 I of course had some help from my little baking assistant…Aiden the Adorable. 🙂

and loves to monkey around a bit too! 😛

We’ve been a wee bit more happy {if that’s even possible since we’re always smiling} now that we are trying to get back to a regular nap schedule *fingerscrossed*…but that’s a whole other parenting post in itself..

So while little man is  napping, I’m going to enjoy a nice piece of this lovely bread…a half of slice with a smear of peanut butter is calling my name! ❤

Talk about a great quick booty kicker…my legs were shakingggg by the last wall sit. Feel the burrnnn!!

Milk Cookies

Cookies cookies cookies YAY!!

So I’m always looking for yummy, healthy cookie options and was recently disapointed with TLC Kashi cookies that I bought the other day. I LOVE Kashi products, but the cookies were just blahhh in my opinion. {Sorry Kashi!} Along with wanting a yummy treat, I’m always seeking healthified versions of baked goods and this one was in deed a hit. I had first tried making a version of these cookies a couple of months ago as a way to help increase/boost my milk supply. {it’s all about the leche these days! 😉 } However, that other recipe that I tried was also disappointing :-/Then I came across this recipe and decided to give these cookies another go around and my oh my did they NOT disappoint at all, in fact they are FA BULOUSLY DELICIOUS!

Major Milk Makin’ Cookies
Recipe by Kathleen Major

1 1/2 c. whole wheat flour
1 3/4 c. oats
1 tsp baking soda
1 tsp salt
3/4 c. almond butter or peanut butter {I used Almond butter & I think that’s what made them super yummy}
1/2 c. butter, softened
1 c. flax
3 T brewer’s yeast
1/3 c. water
1 tsp cinnamon
1/2 c. sugar
1/2 c. brown sugar
2 tsp vanilla
2 large eggs
2 c. (12oz) chocolate chips
1 c. chopped nuts of your choice

Preheat oven to 350 degrees Fahrenheit

Combine flour, baking soda, cinnamon and salt in a bowl.
In a large bowl, beat almond butter, butter, sugar, brown sugar, vanilla, brewer’s yeast, flax and water until creamy.
Mix in eggs.
Gradually beat in flour mixture.
Mix in nuts and chocolate chips.
Add oats slowly, mixing along the way.

Place balls of dough onto greased baking sheets or baking stones.

Press down each ball lightly with a fork.
Bake 12 minutes.

Now you might say, “OMG! Milk making cookies? No thank you..” But seriously these are REALLY GOOD and no they aren’t going to make you lactate at random..haha {though that would be funny}, instead these are super healthy cookies filled with tons of fiber and healthy fats. So trust me…TRY THEM! 🙂 “Try them, try them, and you may! Try them and you may, I say.” 😉 ― Dr. Seuss, Green Eggs and Ham

baked tilapia

So yesterday I tried a new recipe that I found online and I LOVED IT! So easy and so yummy!

It was adapted from this recipe: Baked Tilapia

Ingredients:

4 tilapia filets

1 & 1/2 tablespoon olive oil

1 dash Tony Chacheres creole seasoning

1/2 teaspoon each of garlic powder, onion powder and lemon pepper

1/2 teaspoon parsley, dried or fresh

2 tablespoons of fresh lemon juice

1 tablespoon  each of parmesan cheese and  bread crumbs and 5 smashed croutons (I used olive oil flavored Texas toast croutons)

Directions

Preheat oven to 375.  Place fish in a 9×10 baking pan. Sprinkle TC’s creole seasoning, garlic powder, onion powder, lemon pepper and parsley over fish. Pour olive oil & lemon juice over the fish. Bake for 15 minutes. Mix parmesan cheese, bread crumbs and croutons and sprinkle over fish. Bake for an additional 5 to 10 minutes until fish flakes easily with fork. Switch oven to broil for 2 minutes to get fish crispy, if desired.*

*I personally think that broiling is necessary and adds to both the texture & flavor of the tilapia.

Number of Servings: 3-4

My hubby & lillte sister loved it & asked for seconds! Next time I’ll have to make more for second helpings!! 🙂

Aiden @ 3 months

Baby Aiden turned 3 months while in TEXAS with his grandparents 🙂

At *3 months* Aiden…

…gets fuller cheeks every day that mommy just loves to kiss all the time!

…loves to smile and laugh

…has started to sprout cute little curls 🙂

…kicks and dances all the time

…loves snuggling

…began drooling a lot and always has his hands in his mouth.

…STILL loves that paci

…nurses 2-3 times at night

…still has yet to nursing in public, but that’s ok, we improvise and get the job done in the truck. (it’s intimidating when you hawk eyes on ya 90% of the time…)

…loves car rides especially when his music is jamming.

…loves loves loves morning time

…also loves bath time, but especially loves using his legs to push and move around in the little sling.

…enjoys snuggling in the Moby wrap

…likes his play mat, but still doesn’t like tummy time.

…uses his abs to sit himself up when he’s laying reclined on a pillow or the boppy

…rode in an airplane for the first time and did a GREAT JOB!

…is ALL about his hands

…began rolling over again {on May 22}, he had rolled over early on then went on a rolling over hiatus, but is now back at it rolling from tummy to his back.

…is still swaddled at night and sleeping in his pack & play next to mommy & daddy’s bed.

However while in Texas….

…we began to nurse laying down….and well….he LOVED it and prefers it now bc he likes to fall asleep afterwards and sleep with mommy & daddy.

…was held ALL THE TIME and got little tummy time due to his immense popularity 😉

…tried a teeny tiny taste of ice cream given to him by his Popo 😛 (Mom said NO, but grandparents insisted it was no big deal)

…didn’t have much a set bed time or a wake up time bc we partied like rockstars while on vacation

…oh and he didn’t want to be swaddled at night while being in TX, guess he became a *big boy* while in the lonestar state 🙂

…had lots of fun in the sun while in Texas, he attended his first HS championship baseball game, and spent lots of family time by Popo’s pool.

On Mother’s Day {May 13} Mr. Aiden slept for almost 8 hours straight, sleeping from 7 pm til 2:30 am. 😀 So mommy got a GREAT gift of some good sleep! 🙂 & Daddy & him also got me a sweet charm bracelet. {<3 James Avery}

Little man is growing soo fast and we are loving seeing the person he is becoming with each passing day. ❤
